Ingredients
  • 1 tsp Olive oil
  • 3.5 oz Ground pork chorizo
  • 1 cup Frozen cauliflower rice
  • 1/4 Avocado, sliced
  • 1 tbsp Fresh cilantro, chopped (for garnish)
Directions
  1. Heat olive oil in a small skillet over medium-high heat.
  2. Add the ground chorizo to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Add the frozen cauliflower rice to the skillet with the cooked chorizo and its rendered fat. Stir to combine and cook for 3-4 minutes, or until the cauliflower rice is heated through and tender.
  4. Transfer the chorizo and cauliflower rice mixture to a bowl. Top with sliced avocado and fresh cilantro before serving.
