Crispy baked chicken cutlets with marinara and a light sprinkle of mozzarella—classic comfort with a lighter touch.

Ingredients
  • Chicken breast 10 oz
  • Breadcrumbs 1/3 cup
  • Grated Parmesan 1 tbsp
  • Large egg 1
  • Marinara sauce 1/2 cup
  • Part-skim mozzarella shredded 1/3 cup
  • Olive oil 1 tbsp
  • Kosher salt and black pepper
Directions
  1. Heat oven to 425°F 220°C. Lightly oil or spray a wire rack set over a sheet pan or the pan itself.
  2. Season chicken on both sides with salt and pepper.
  3. Beat egg in a shallow bowl. In another bowl mix breadcrumbs grated Parmesan and a small pinch of salt and pepper.
  4. Dip chicken in egg then coat evenly in breadcrumb mixture. Place on the prepared rack or pan.
  5. Bake 12–14 minutes until the coating is lightly golden.
  6. Spoon marinara over the chicken and sprinkle mozzarella.
  7. Bake 5–6 minutes more until the cheese is melted and the chicken reaches 165°F 74°C.
  8. Optional broil 1–2 minutes for extra browning watch closely.
  9. Rest 2 minutes then serve.
