This high-protein wrap is the perfect solution for a busy lunch, combining the rich flavors of beef and mushrooms with the fresh bite of spinach. Instead of a heavy sauce, we use non-fat Greek yogurt to add creaminess and a significant protein boost. It’s a balanced, flavorful, and incredibly quick meal that will keep you full and focused.

Ingredients
  • 4 oz lean ground beef
  • 1 Large (10-inch) whole wheat tortilla
  • 1/4 cup non-fat Greek yogurt
  • 1 cup Mushrooms
  • 1 cup Fresh spinach
  • 1 tsp Olive oil
  • 1/2 tsp Seasoning mix: garlic powder, onion powder, salt, and pepper
Directions
  1. Heat olive oil in a medium skillet over medium-high heat. Add the sliced mushrooms and cook for 4-5 minutes until they release their liquid and start to brown.
  2. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until fully browned. Drain any excess grease.
  3. Stir in the spinach and seasonings, and cook for 1-2 minutes until the spinach is just wilted.
  4. Remove the skillet from the heat and stir in the Greek yogurt until everything is well combined and creamy.
  5. Warm the tortilla for 15 seconds in the microwave. Spoon the beef mixture onto the center of the tortilla, fold in the sides, and roll it up tightly. Serve immediately.
