Ingredients
  • 4 oz Ground Chicken
  • 1 tbsp Olive Oil
  • 1 clove Minced Garlic
  • 2 tbsp Sun-dried Tomatoes in oil, drained and chopped
  • 2 tbsp Heavy Cream
  • 1 cup Fresh Spinach
  • 1 tbsp Grated Parmesan Cheese
  • to taste Salt and Black Pepper
Directions
  1. Heat olive oil in a skillet over medium-high heat. Add the ground chicken and cook, breaking it apart, until browned and cooked through. Season with salt and pepper.
  2. Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until the garlic is fragrant.
  3. Reduce the heat to low and stir in the heavy cream. Let it simmer gently for 1-2 minutes to thicken slightly.
  4. Add the fresh spinach and stir until it has just wilted into the sauce.
  5. Remove from heat, stir in the grated Parmesan cheese, and serve warm.
