Ingredients
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1/2 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 avocado, diced
  • 2 tbsp lime juice
  • 1/2 tsp total of: cumin, chili powder, and salt
  • 2 large whole wheat tortillas
Directions
  1. In a medium bowl, combine the rinsed black beans, thawed corn, diced red onion, chopped cilantro, diced avocado, lime juice, cumin, chili powder, and salt.
  2. Gently mix all ingredients until well combined.
  3. Lay out each tortilla. Spoon half of the black bean and corn mixture onto the center of each tortilla.
  4. Fold in the sides of the tortilla, then roll it up tightly to form a wrap. Serve immediately.
