This skillet is perfect for a quick, satisfying weeknight dinner that doesn’t skimp on flavor or protein. Ingredients
  • 1 tsp Olive oil
  • 4.5 oz 99% lean ground turkey
  • 3/4 cup Cannellini beans, rinsed and drained
  • 1/2 cup Canned diced tomatoes
  • 2 cups Fresh spinach
  • 1/4 small Yellow onion, chopped
  • 1 clove Garlic, minced
  • 1 tsp Italian seasoning
  • a pinch Salt and black pepper
Directions
  1. Heat olive oil in a medium non-stick skillet over medium-high heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Add the ground turkey to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain any excess liquid if necessary.
  3. Stir in the diced tomatoes, cannellini beans, and Italian seasoning. Season with salt and pepper to taste. Bring the mixture to a simmer and cook for 3-4 minutes to allow the flavors to meld.
  4. Add the spinach to the skillet and stir until it has wilted completely, about 1-2 minutes. Serve immediately.
