Ingredients
  • 2 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 oz fresh spinach
  • 1/4 cup sun-dried tomatoes
  • 1 tsp Italian seasoning

Directions
  1. Pat the chicken thighs dry and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  2. Reduce heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and Italian seasoning. Continue to stir until the cheese is melted and the sauce has slightly thickened. Season with salt and pepper to taste.
  4. Add the fresh spinach and sun-dried tomatoes to the sauce. Cook for 2-3 minutes, until the spinach has wilted.
  5. Return the cooked chicken thighs to the skillet, spooning some of the sauce over them. Let it simmer for another 1-2 minutes to heat through before serving.
