This isn’t your average bean dip. By blending cannellini beans with silken tofu, we create an incredibly smooth and creamy texture without any dairy. Packed with plant-based protein, it’s a filling snack that tastes light and refreshing thanks to a generous amount of lemon juice and fresh herbs. This dip is a fantastic meal prep solution for healthy snacking throughout the week.

Ingredients
  • 2 cans (15-oz) Canned cannellini beans
  • 6 oz Silken tofu
  • 1/4 cup Nutritional yeast
  • 1/4 cup Fresh lemon juice
  • 1/4 cup Fresh dill, chopped
  • 2 Garlic cloves
  • 1/2 tsp each, to taste Salt and pepper
Directions
  1. Combine the rinsed cannellini beans, silken tofu, nutritional yeast, lemon juice, garlic cloves, salt, and pepper in a high-speed blender or food processor.
  2. Blend on high for 1-2 minutes, scraping down the sides as needed, until the mixture is completely smooth and creamy.
  3. Add the chopped fresh dill and pulse a few times just to incorporate the herbs. Avoid over-blending, as it can turn the dip green.
  4. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to your preference.
  5. Serve immediately with vegetable sticks, crackers, or pita bread.
