A traditional Moroccan lentil and tomato soup infused with warm spices, chickpeas, and fresh cilantro — hearty, aromatic, and comforting with every spoonful.

Ingredients
  • 1 cup dried red lentils, rinsed
  • 1 cup canned chickpeas, drained
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • ½ tsp paprika
  • salt & pepper
  • 2 tbsp cilantro
Directions
  1. Sauté onion, garlic, carrots, celery in oil
  2. Add to slow cooker with lentils, chickpeas, tomatoes, broth, spices
  3. Cook on low 6 hr
  4. Season and garnish with cilantro
