Ingredients
  • 5 oz Raw shrimp
  • 1 tbsp Olive oil
  • 1/2 Medium avocado
  • 2 tbsp Red onion
  • 1/4 cup Fresh cilantro
  • 1 tbsp Lime juice
  • to taste Salt and pepper
Directions
  1. Pat the shrimp dry and season with salt and pepper. Heat 1/2 tbsp of olive oil in a skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side, until pink and opaque. Set aside.
  2. In a small bowl, gently combine the diced avocado, red onion, half of the chopped cilantro, the lime juice, and the remaining 1/2 tbsp of olive oil. Season the salsa with salt and pepper.
  3. Add the cooked shrimp to the bowl with the avocado salsa. Toss gently to combine.
  4. Garnish with the remaining fresh cilantro and serve immediately.
