Description

Simple sheet pan chicken and vegetables tossed in a light BBQ sauce for an easy 3–4 day dinner prep.

Ingredients
  • 1 lb boneless skinless chicken breast, cut into 1-inch pieces
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tbsp olive oil
  • 1/4 cup light BBQ sauce
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
Directions
  1. Preheat oven to 400°F and line a large sheet pan with parchment.
  2. In a bowl, toss chicken and vegetables with olive oil, smoked paprika, salt, and pepper.
  3. Spread the mixture on the sheet pan in an even layer and bake 15 minutes.
  4. Remove the pan, drizzle with BBQ sauce, toss to coat, and bake another 5–10 minutes until chicken is cooked through.
  5. Divide into 4 containers and add extra BBQ sauce on the side if desired.
