Description

Garlicky shrimp tossed with zucchini noodles in a light tomato–basil sauce — fresh, fast, and low-carb.

Ingredients
  • 1 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1/4 tsp red pepper flakes (optional)
  • 4 medium zucchini, spiralized
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper, to taste
Directions
  1. Heat oil in a large skillet over medium-high. Sear shrimp 1–2 minutes per side; remove.
  2. Add garlic; cook 30 seconds. Stir in diced tomatoes and red pepper flakes; simmer 2–3 minutes.
  3. Toss in zucchini noodles and cook 2 minutes until just tender.
  4. Return shrimp, fold in basil, season, and serve immediately.
