Ingredients
  • 7 oz extra-firm tofu, pressed for at least 15 minutes
  • 3/4 cup canned black beans, rinsed and patted dry
  • 1/4 cup panko breadcrumbs
  • 1.5 tsp total of: smoked paprika, chili powder, and cumin
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 2 whole wheat burger buns
  • Toppings like lettuce, tomato, onion
Directions
  1. In a large bowl, crumble the pressed tofu with your hands. Add the black beans and mash about half of them with a fork, leaving some whole for texture.
  2. Add the panko breadcrumbs, smoked paprika, chili powder, cumin, garlic powder, salt, and pepper to the bowl. Mix everything together until well combined, but don't overmix.
  3. Divide the mixture in half and form into two thick patties.
  4. Heat the olive oil in a large skillet over medium-high heat. Carefully place the patties in the skillet and cook for 4-5 minutes per side, until golden brown and firm.
  5. During the last minute of cooking, you can toast your buns in the skillet if desired.
  6. Assemble the burgers on the toasted buns with your favorite toppings and serve immediately.
