Description

Seared steak strips with peppers and onions tossed with rice — sizzling fajita flavor in one easy skillet.

Ingredients
  • 1 lb flank steak, thinly sliced
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 2 cups cooked rice
  • Fresh cilantro and lime wedges, for serving
Directions
  1. Heat oil in a large skillet over high heat. Sear steak 2–3 minutes; remove.
  2. Add peppers and onion; sauté 3–4 minutes until tender-crisp.
  3. Stir in chili powder, cumin, paprika, and salt; add cooked rice and toss until warmed.
  4. Return steak, squeeze lime, garnish with cilantro, and serve.
