This simple one-pan dish is perfect for a quick and satisfying weeknight dinner without the heavy cleanup. The combination of zesty lemon, savory chicken, and pasta delivers a classic Mediterranean flavor profile. It's a fantastic high-protein, low-fat option that feels both light and nourishing.

Ingredients
  • 4 oz Boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup Dry orzo pasta
  • 1/2 cup Low-sodium chicken broth
  • 1 cup Fresh spinach
  • 1/2 tsp Olive oil
  • 1 tbsp Lemon juice, fresh
  • 3/4 tsp total of: dried oregano and garlic powder
Directions
  1. Heat olive oil in a small skillet or saucepan over medium-high heat. Add the cubed chicken, season with oregano and garlic powder, and cook until lightly browned, about 3-4 minutes.
  2. Add the dry orzo and chicken broth to the skillet. Stir everything together, bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed.
  3. Remove from heat and stir in the fresh spinach. The residual heat will wilt it down in about a minute.
  4. Stir in the fresh lemon juice, season with salt and pepper to taste, and serve immediately.
