Sautéed shrimp tossed with mixed vegetables, fresh garlic, and a squeeze of lemon—light, high‑protein, and on the table in minutes.

Ingredients
  • 10 oz shrimp, peeled & deveined
  • 2 cups mixed vegetables (like broccoli florets + sliced bell pepper)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/3 cup low-sodium chicken or vegetable broth
  • 1 tbsp lemon juice
  • 1/4 tsp salt, black pepper to taste
Directions
  1. Heat half the oil in a large skillet over medium-high. Add vegetables and a pinch of salt; cook, tossing, until crisp-tender with some char, 3–4 minutes. Transfer to a plate.
  2. Add remaining oil to the skillet. Sear shrimp in a single layer 1–2 minutes per side until just pink.
  3. Add minced garlic and cook 30 seconds until fragrant.
  4. Return vegetables to the pan and toss.
  5. Finish with lemon; season to taste.
