Ingredients
  • 8 flour tortillas (or corn)
  • 2 cans (15 oz) black beans, drained
  • 1 cup corn kernels
  • 2 cups salsa
  • 1 cup shredded cheese
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt, pepper to taste
  • Fresh cilantro for garnish
Directions
  1. Heat oven to 375°F (190°C). Grease a baking dish.
  2. Layer tortillas, beans, corn, salsa, and cheese; repeat layers.
  3. Sprinkle chili powder, cumin, salt, and pepper between layers.
  4. Cover with foil and bake 25 minutes; uncover and bake 10–15 minutes.
  5. Rest 5 minutes; garnish with cilantro.
