Ingredients
  • 4 oz Boneless, skinless chicken thighs
  • 1/2 tbsp Avocado oil
  • 1 clove Garlic, minced
  • 2 tbsp Heavy whipping cream
  • 2 tbsp Grated Parmesan cheese
  • 1 cup Fresh spinach
  • Salt and pepper (to taste)
Directions
  1. Pat the chicken thigh dry and season generously with salt and pepper.
  2. Heat the avocado oil in a small skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant, being careful not to burn it.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until it melts and the sauce begins to thicken slightly, about 1-2 minutes.
  5. Add the fresh spinach to the sauce and stir until it wilts. Return the chicken to the skillet, spooning some of the sauce over it. Serve immediately.
