Description

Zesty shrimp sautéed in a chili-lime glaze and served over cilantro-lime rice with roasted bell peppers.

Ingredients
  • 1 lb raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 clove garlic, minced
  • Juice and zest of 1 lime
  • 3 cups cooked cilantro-lime rice
  • 2 cups roasted bell pepper strips
  • Salt and pepper to taste
Directions
  1. Pat shrimp dry and season with chili powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat; add shrimp and cook 3–4 minutes until pink and opaque.
  3. Add garlic, lime juice, and lime zest; toss for 1 minute to coat and slightly reduce the juices.
  4. Divide cilantro-lime rice and roasted bell peppers into 4 containers and top with shrimp and pan juices.
