Description

Beef stews slowly with sweet potatoes, carrots, onions, and broth, scented with rosemary—gluten‑free, deeply comforting, and ideal for hands‑off weekend cooking.

Ingredients
  • 1.5 lbs beef stew meat, trimmed
  • 2 medium sweet potatoes, peeled and cubed
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil
  • 1 tsp salt, pepper to taste
Directions
  1. Brown beef in olive oil in a skillet 3–4 minutes; transfer to slow cooker.
  2. Add sweet potatoes, carrots, onion, and garlic. Pour in broth.
  3. Stir in thyme, rosemary, salt, and pepper.
  4. Cook on LOW 7 hours (or HIGH 4 hours) until beef is tender.
  5. Adjust seasoning and serve warm.
