Description

Chicken gently simmers in green curry paste and coconut milk with bell pepper and zucchini, finished with fresh basil and lime—aromatic, creamy, and vibrant.

Ingredients
  • 1.5 lbs chicken thighs, trimmed
  • 1 can (14 oz) coconut milk
  • 2 tbsp green curry paste
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 tbsp brown sugar (optional)
  • 1 tbsp fish sauce or soy-free seasoning (optional)
  • 1/2 cup chicken broth
Directions
  1. Whisk coconut milk with curry paste; add to slow cooker with broth.
  2. Add chicken and sliced vegetables; stir.
  3. Cook on LOW 6 hours (or HIGH 3–4 hours) until tender.
  4. Stir in sugar or seasoning if using; serve with rice and lime.
