Description

Herbed turkey meatballs with feta, served over lemony orzo and wilted spinach for a Mediterranean-style meal prep.

Ingredients
  • 1 lb lean ground turkey
  • 1/4 cup crumbled feta cheese
  • 1/4 cup whole-wheat breadcrumbs
  • 1 large egg
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 3 cups cooked orzo
  • 3 cups baby spinach
  • Juice and zest of 1 lemon
Directions
  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. In a bowl, combine ground turkey, feta, breadcrumbs, egg, oregano, and salt; mix gently and form about 16 meatballs.
  3. Place meatballs on the baking sheet and bake 18–20 minutes until cooked through.
  4. While meatballs bake, cook orzo according to package directions, then drain and toss with lemon juice, zest, and baby spinach until spinach wilts.
  5. Divide lemon orzo and spinach into 4 containers and top with turkey meatballs.
