Ingredients
  • 1 lb lean ground beef (90/10)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 tbsp taco seasoning + 2 tbsp water or broth (optional)
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1/4 cup sour cream
  • Salt and black pepper, to taste
  • Cilantro (optional)
Directions
  1. Heat oil in a large skillet over medium-high. Add onion and bell pepper; cook 3–4 minutes until softened.
  2. Add beef and taco seasoning (plus 2 tbsp water or broth if using). Cook, breaking up the meat, until browned; drain excess fat if needed.
  3. Season to taste with salt and pepper.
  4. Sprinkle cheese over the skillet and let it melt, 1–2 minutes.
  5. Top with avocado, sour cream, and cilantro. Serve hot.
