Ingredients
  • 4 large eggs
  • 3 oz turkey sausage, cooked and crumbled
  • 1 cup fresh spinach, chopped
  • 2 tbsp shredded cheddar (optional)
  • 1 tbsp milk or water
  • 1/8 tsp salt, black pepper to taste
  • Cooking spray
Directions
  1. Preheat oven to 375°F (190°C). Spray a 6-cup muffin tin.
  2. Whisk eggs with milk, salt, and pepper. Fold in sausage, spinach, and cheese if using.
  3. Divide mixture into 4 cups and bake 16–18 minutes until set.
