Description

Lean ground beef cooked with chili and garlic, served with quinoa, peppers, and spinach for a bold meal-prep bowl.

Ingredients
  • 1 lb 93% lean ground beef
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 clove garlic, minced
  • 1 red bell pepper, diced
  • 3 cups cooked quinoa
  • 2 cups baby spinach
  • Salt and pepper to taste
Directions
  1. Heat olive oil in a large skillet over medium heat; add ground beef and cook 5–7 minutes, breaking it up, until browned. Drain excess fat if needed.
  2. Stir in chili powder, cumin, garlic, and bell pepper; cook 3–4 minutes until peppers soften.
  3. Add spinach and cook 1–2 minutes until wilted; season with salt and pepper to taste.
  4. Divide cooked quinoa and beef mixture into 4 containers.
