Description

Chickpeas simmer with tomatoes, carrots, apricots, cumin, and cinnamon in vegetable broth until saucy; serve with couscous or rice.

Ingredients
  • 2 cans (15 oz) chickpeas, drained
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 1/3 cup chopped dried apricots
  • 2 tsp ground cumin
  • 1 tsp cinnamon
  • 4 cups vegetable broth
  • 1 tsp salt, pepper to taste
Directions
  1. Add chickpeas, tomatoes, vegetables, apricots, spices, and broth to slow cooker.
  2. Stir, cover, and cook on LOW 7 hours (or HIGH 4 hours).
  3. Adjust seasoning and serve with couscous or rice.
