Description

Roasted eggplant layers with seasoned ground turkey, marinara, ricotta and egg, plus mozzarella and Parmesan—baked until bubbly and golden.

Ingredients
  • 1 large eggplant, sliced lengthwise (1/4-inch)
  • 10 oz ground turkey or beef
  • 1 cup no-sugar marinara
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried basil
  • Salt & pepper
Directions
  1. Preheat oven to 400°F (200°C). Salt eggplant slices; rest 10 minutes; pat dry.
  2. Sauté garlic in olive oil; brown ground meat; add marinara and basil; simmer 5 minutes.
  3. Mix ricotta with a pinch of salt and pepper.
  4. Layer in a small baking dish: sauce, eggplant slices, ricotta, mozzarella; repeat; finish with parmesan.
  5. Bake 20–25 minutes until bubbling; broil 1–2 minutes for color. Rest 5 minutes before slicing.
