Ingredients
  • 1.5 lb beef stew meat (about 1-inch cubes)
  • 1 tbsp olive oil (plus more if needed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 medium cauliflower, cut into small florets (about 5–6 cups)
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika (or regular)
  • 1 bay leaf (optional)
  • 1 tsp salt, black pepper to taste
Directions
  1. Pat beef dry; season with salt and pepper.
  2. Heat oil in a large heavy pot over medium-high. Brown beef in 2–3 batches (don’t crowd); transfer to a plate.
  3. In the same pot, reduce heat to medium. Add onion; cook 3–4 minutes until translucent. Stir in garlic 30 seconds.
  4. Return beef (and any juices) to the pot. Add broth, thyme, paprika, and bay leaf. Bring to a boil, then reduce to a gentle simmer, cover slightly ajar, and cook 60–75 minutes until beef is just tender.
  5. Add mushrooms and cauliflower. Simmer uncovered 12–15 minutes until vegetables are tender and stew slightly reduces.
  6. Taste and adjust salt/pepper. (Optional: light sprinkle of xanthan gum while stirring to thicken; simmer 1–2 minutes.)
  7. Remove bay leaf and serve.
