Description

Sliced chicken breast, peppers, and onions cooked fajita-style and served over rice with a lime-yogurt drizzle.

Ingredients
  • 1 lb boneless skinless chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 1 tbsp olive oil
  • 1 tbsp fajita or taco seasoning (low sodium)
  • Juice of 1 lime
  • 3 cups cooked white or brown rice
  • 1/2 cup plain nonfat Greek yogurt
Directions
  1. In a bowl, toss the sliced chicken with half the olive oil and the fajita seasoning.
  2. Heat a large skillet over medium-high heat and cook the chicken 5–7 minutes until cooked through; transfer to a plate.
  3. Add remaining oil, peppers, and onion to the skillet and sauté 5–7 minutes until tender and slightly charred.
  4. Return chicken to the pan and squeeze lime juice over the mixture, tossing to combine.
  5. Whisk yogurt with a splash of water and a pinch of salt to make a lime crema. Divide rice into 4 containers, top with fajita mixture, and drizzle with crema or pack it on the side.
