Description

Sautéed mushrooms and wilted spinach baked into fluffy eggs with onion and garlic—simple, protein‑forward, and sliceable for easy breakfasts.

Ingredients
  • 8 large eggs
  • 1 cup shredded cheese
  • 2 cups baby spinach
  • 8 oz mushrooms, sliced
  • 1/2 cup milk
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, pepper to taste
Directions
  1. Heat oven to 375°F (190°C). Grease a baking dish.
  2. Sauté mushrooms in olive oil 5 minutes; add spinach to wilt.
  3. Whisk eggs, milk, garlic powder, salt, and pepper; stir in cheese.
  4. Combine with vegetables, pour into dish.
  5. Bake 35–40 minutes until set; rest 5 minutes.
