Ingredients
  • 12 oz dry spaghetti (or linguine)
  • 1 tbsp olive oil
  • 3 cloves garlic, thinly sliced
  • 1 can (14 oz) diced tomatoes
  • 3 cups vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh basil, chopped
  • 2 tbsp grated Parmesan (optional)
Directions
  1. In a wide pot, add pasta, olive oil, garlic, diced tomatoes, broth, oregano, salt, and pepper.
  2. Bring to a boil and cook, stirring occasionally, until pasta is al dente and liquid reduces to a glossy sauce, 10–12 minutes.
  3. Fold in basil, adjust seasoning, and serve with Parmesan if desired.
