Description

Bell peppers baked until tender and filled with ground turkey, onion, garlic, tomato sauce, and cooked rice—comforting, saucy, and weeknight‑friendly.

Ingredients
  • 4 large bell peppers, tops removed
  • 1 lb ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 cup tomato sauce
  • 1 small onion, diced
  • 1 zucchini, diced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt, pepper to taste
  • 1 tbsp olive oil
Directions
  1. Heat oven to 375°F (190°C). Sauté onion and zucchini in olive oil 3–4 minutes.
  2. Add turkey; cook until browned. Stir in rice, tomato sauce, and seasoning.
  3. Stuff peppers and place in baking dish; add 1/2 cup water to dish.
  4. Cover with foil and bake 35 minutes; uncover 10 minutes until tender.
