Description

Juicy chicken in a bright coconut–lime sauce over jasmine rice with herbs — fresh, zesty, and weeknight fast.

Ingredients
  • 1 lb chicken breast, thinly sliced
  • 1 tbsp coconut oil
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 can (13.5 oz) light coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 2 cups cooked jasmine rice
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
Directions
  1. Heat coconut oil in a skillet over medium-high. Sear chicken 3–4 minutes until lightly browned; remove.
  2. Sauté onion and bell pepper 2–3 minutes. Stir in garlic and ginger 30 seconds.
  3. Add coconut milk, fish sauce, lime juice, and brown sugar; simmer 3 minutes.
  4. Return chicken and simmer 3–4 minutes until cooked through. Serve over rice with cilantro and lime.
