Preheat your oven to 375°F (190°C). Grease a 12-cup standard muffin tin generously. In a large skillet over medium-high heat, cook the ground sausage until browned, breaking it apart with a spoon. Drain off any excess grease. In a large bowl, whisk the 12 eggs together. Stir in the cooked sausage, shredded cheddar cheese, chopped spinach, salt, and pepper until well combined. Evenly distribute the egg mixture among the 12 prepared muffin cups, filling each about three-quarters full. Bake for 18-22 minutes, or until the muffins are set in the center and lightly golden on top. Let them cool for a few minutes in the tin before removing.
