In a skillet over medium-high heat, cook the ground beef, breaking it up with a spoon. Season with salt and pepper and cook until browned and no longer pink. Drain any excess grease. While the beef cooks, prepare the salad. Add the chopped romaine lettuce to a large bowl. Top the lettuce with the cooked ground beef, shredded cheddar cheese, cherry tomatoes, pickles, and red onion. Drizzle the mayonnaise over the salad (or mix it with a splash of water or pickle juice to create a thinner dressing). Toss everything together and serve immediately.
