Colossal Chorizo Breakfast Burrito Prep
Massive, freezer-friendly burritos loaded with over 1000 calories each, featuring spicy chorizo, eggs, potatoes, and cheese.
Ingredients
- 1 lb Ground chorizo
- 1.5 lbs potatoes
- 12 Large eggs
- 6 Large (10-inch) flour tortillas
- 2 cups Mexican blend cheese
- 1 can (15 oz) Canned black beans
- 1 tbsp Olive oil
Instructions
Heat olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until tender and golden. Remove from skillet and set aside. In the same skillet, cook the ground chorizo until browned and cooked through, about 5-7 minutes. Drain off excess grease, leaving about a tablespoon in the pan. In a large bowl, whisk the 12 eggs with a pinch of salt and pepper. Pour them into the skillet with the chorizo grease and scramble until just set. Warm the tortillas in the microwave for 30 seconds to make them pliable. Assemble the burritos: Down the center of each tortilla, layer an equal portion of the cooked potatoes, chorizo, scrambled eggs, black beans, and shredded cheese. Fold in the sides of the tortilla, then tightly roll it up from the bottom to enclose the filling completely.
