Fry the turkey bacon in a small skillet over medium-high heat until it reaches your desired crispiness. Fill a small saucepan with about 3 inches of water and a splash of vinegar, bringing it to a very gentle simmer. Crack the egg into a small ramekin, then carefully slide it into the simmering water. Poach the egg for 3 minutes for a runny yolk, then remove with a slotted spoon and pat dry. Slice the avocado and lay it on a plate alongside the crispy turkey bacon. Top the avocado with the poached egg and sprinkle the crumbled feta cheese over the entire plate.
