Chicken Thighs with Garlic Butter Spinach

Pan-seared chicken thighs served over a bed of spinach sautéed in rich garlic butter.

Season the chicken thighs on both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Place the chicken skin-side down in the skillet and cook for 6–7 minutes until the skin is crispy, then flip and cook for another 5–6 minutes until done. Remove the chicken from the pan and set it aside to rest. In the same pan, melt the butter over medium heat and stir in the minced garlic for 30 seconds. Add the spinach to the pan and toss until just wilted, then serve immediately with the chicken.
